Irish Soda Bread

Basic Irish Soda Bread
Yield:  4 wedges

2 – 2.5 cups all-purpose flour
1 pinch salt
1 teaspoon baking soda
1 cup buttermilk
Preheat cast iron skillet over medium heat.
Sift together dry ingredients, add buttermilk (and any fillings), stir, adding extra flour just until the dough can be removed in one piece onto a floured surface.  Knead lightly, forming a disk 1/2-3/4 in. Thick.
Dust the skillet with flour and plop your disk on top.   Cut the dough into at least 4 wedges (smaller wedges will cook faster)
Cook 7-8min / until browned on each side.
